Grandma Stella shares Rimon’s recipe for Keshmesh Polow, a delicious rice dish featuring fried onions, raisins, and aromatic spices. She includes a special winter variation with grated orange peel.

Lots of fried onions, cumin seeds, ground coriander seeds, a large handful of raisins.
In winter, add grated orange peel from one orange.
After the onions are sautéed, combine the rest of the ingredients and sauté some more.
Taste and adjust to your liking.
Layer in rice.
